One of the capital’s most influential chefs, and the man at the helm of the legendary Duck & Waffle, Dan Doherty talks us through one of his signature dishes - spicy ox cheek doughnut with apricot jam.

Chef, restaurateur, author, philanthropist. Dan Doherty is a busy man. And as his 71k Instagram followers and 22k Twitter followers will tell you, he knows a thing or 2 about creating beautiful food.

Currently overseeing the kitchens at Duck & Waffle, a 24-hour restaurant on the 40th floor of Heron Tower, and its laidback little sister Duck & Waffle Local, these 2 ingredients may have made him famous, but there’s certainly much more in Dan’s culinary locker. Starting as an apprentice at the then Michelin-starred 1 Lombard Street, Dan went onto develop his signature modern British style at The Ambassador in Exmouth Market where he earned 2 AA Rosettes, and then at The Empress in Victoria Park. He then championed local and artisanal British ingredients at Greenwich restaurant and microbrewery The Old Brewery, before the culmination of his diverse experience and influences - the Duck & Waffle menu.

Outside of the kitchen, Dan Doherty is committed to supporting not only other chefs, but to using food as a force for good. Doherty launched The TMRW Project in 2015, which nurtures up-and-coming industry talent through talks, dinners and events, and is also a longtime supporter of Action Against Hunger, using his position to raise both funds and awareness.

Not content with running restaurants and charitable initiatives, Dan has also released his own cookbooks, and is a regular contributor to numerous publications. In short, this is a man who gets stuff done. There is a lot of talk and hype in the restaurant industry, but there’s no waffle here. Dan Doherty is a man of substance.
